Dinner – Pumpkin Soup with Gorgonzola

A variation of pumpkin soup used primarily in the most northern sections of Italy. I would use this on more special occasions. Substitute the Heavy Cream and Butter with ½ pound of Gorgonzola. Break off several small pieces and set them aside. When it is time to add the heavy cream and butter, instead add the remaining Gorgonzola.

Finally, when serving, add a piece of Gorgonzola before sprinkling the green onion.
